You will need:
- 110g plain flour
- A pinch of salt
- 2 eggs
- 200ml milk with 75ml water
- 1 tbsp sunflower oil
- 1 lemon
- 1 lime
- 1tbs of sugar
What to do:
- Sift the flour and salt into a large mixing bowl with a sieve held high above the bowl so the flour gets some air in it.
- Make a well in the centre of the flour.
- Break the eggs into it and add a little milk. Using a wooden spoon or whisk, mix the egg and milk and then gradually draw in the flour from the sides as you mix. Add more milk to the central well little by little as required to prevent it becoming too think and dough like.
- When the mixture reaches consistency of think cream, add remaining milk and stir in the oil.
- Cover the bowl and chill for 30mins. This will allow the starch to swell, giving a lighter result.
- Very lightly oil a frying pan and heat it up. The best way to do this is to dab a piece of kitchen roll in oil and wipe around the pan.
- Pour enough of the mixture to lightly coat the base of the pan.
- Place over a medium heat, it should take half a minute or so to cook, lift the edge of the pancake to see if it has gone golden as it should be. Flip the pancake on to the other side and cook for a few seconds.
- Tip the pancake on to a plate, add a squeeze of lemon and lime juice and a sprinkling of sugar.
